- 1 Egg
- 30g Light Soft Cheese
- 2 Slices of Smoked Salmon
- 1 Piece of Bread
- Fresh Berries or Red Grapes
- Pepper & Parsley to Taste
method
- Fill a medium sized saucepan with water and bring to a rolling boil.
- Try to make sure your egg isn’t fridge cold. By having the egg at room temperature, it will be less of a shock for the egg reaching the hot water and therefore less likely to crack. Slowly lower the egg into the water using a slatted spoon.
- Set your timer for 5-6 mins for runny or 8-9 mins for hard-boiled eggs. When the timer goes off, put the egg into a bowl of cold water – this will stop it cooking and cool the shell quickly for peeling.
- Whilst the egg is cooking, toast your bread.
- Once toasted, spread the soft cheese and layer the smoked salmon on top.
- Peel the boiled egg and place it on top of the salmon. Crack some black pepper and/or parsley on top to taste.
- For an unusual finishing touch, add some fresh berries or red grapes to get an additional zing.
