Fried Eggs Sunny side up

Enjoy a sunny side up fried egg on a bed of spinach & an English muffin

  • 2 Eggs
  • 2 English Muffins
  • A Knob of Butter
  • A Handful of Spinach
  1. Cut the English muffins in half and spread the spinach across the halves.
  2. Heat the butter in a frying pan until it melts but isn’t yet hot enough to brown.
  3. Crack one egg onto a small plate or saucer (don’t crack it straight into the pan in case some shell ends up in there as well). Slide it off the saucer into the pan. Repeat this step for the second egg.
  4. Cover with a lid and leave for 4 minutes over a low heat. Check the white is set and, if not, leave it for another 30 seconds and check again.
  5. Serve one fried egg per English muffin. Season to taste.
